Best Christmas Cookies

With Christmas right around the corner, I wanted to share with you my family’s favorite cookies! Of course, everyone likes chocolate chip cookies and snickerdoodles, and well let’s be honest, all the cookies! We might have a tiny sweet tooth!

Lemon Crinkles never last very long in our house, they are sweet little nuggets of sunshine! But don’t worry, if you don’t love lemon like I do…the lemon flavor isn’t overpowering! Not to mention the powdered sugar crinkles make them so cute!

INGREDIENTS
  • 2 Cups Flour
  • 1½ tsp Baking Powder
  • ½ tsp Salt
  • 1 Cup Sugar
  • 3 tsp Lemon Zest
  • ½ C Butter, at room temperature
  • 2 Eggs, at room temperature
  • ¼ Cup Lemon Juice, freshly squeezed
  • ½ tsp Vanila Extract
  • ½ Cup Powdered Sugar

DIRECTIONS

Combine the flour, baking powder, and salt in a bowl. Set aside.

With clean fingers, rub the zest into the granulated sugar until very fragrant.
In a stand mixer, cream the butter and sugar together until they are light and fluffy.  One at a time, add the eggs, mixing until smooth.
Add the lemon juice and vanilla extract, and mix again until smooth.
Add the flour mixture in batches and mix until the dough just comes together.
Chill the dough for 30 minutes before continuing.
Preheat the oven to 350 F.
Roll dough into ⅛ cup balls, then roll in powdered sugar until well coated. Arrange 2″ apart on a parchment-lined baking sheet.
Bake for 10-12 minutes.

Yield: 20-24 Cookies
